Potato Waffles


Butter 2 tbsp
Onion chopped 1 small
Minced garlic 1 tbsp
Mashed potatoes 2 cups
Flour 1/4 cup
Eggs 2
Salt 1/4 tsp
Ground black pepper 1/4 tsp


Melt butter, add onion and garlic and sauté. Preheat a waffle iron.
Combine onion mixture, mashed potatoes, flour, eggs, salt, and black pepper in a large bowl until well blended.
Scoop 1/2 cup batter into the center of waffle iron and close lid. Cook until golden brown, 3 to 5 minutes. Serve with any meat or chicken dish.
