Asian Chicken Fried Rice:
Ingredients
Chicken breast 2
Egg 2
Green chilies chopped 2
Tomatoes chopped 2
Spring onion chopped 2
Yogurt 50 gm
Peas boiled ½ cup
Coriander leaves ¼ bunch
Mint leaves ¼ bunch
Boiled rice 200 gm
Turmeric 1 tsp
Crushed red pepper 1 tsp
Cumin powder 1 tsp
Chili powder 1 tsp
Ginger garlic paste 1 tbsp
All spice powder ½ tsp
Oil 4 tbsp
Salt to taste

All spice powder ½ tsp
Oil 4 tbsp

Method
• Heat 4 tbsp oil in a wok, add 2 chicken breast cut into thin juliennes. Also add 1 tbsp ginger garlic paste and fry well.
• Now add 2 beaten eggs, fry for few seconds, then add 1 tsp turmeric, 1 tsp crushed red pepper, ½ tsp all spices powder, 1 tsp cumin powder and 1 tsp chili powder. Fry on medium flame for 1 – 2 minutes.
• Then add 1/2cup boiled peas, 2 chopped tomatoes, 50 gm yogurt, 2 chopped green chilies, 2 spring onion, ¼ bunch of coriander leaves and ¼ bunch of mint leaves. Mix well.
• Lastly add 200 gm 200 gm boiled rice and salt to taste. Mix well and fry on high flame.
• Dish it out and serve hot.
