Soft Mint Cup Cakes |
Recipe of Softmint cupcakes:
ingredients:
• self raising flour.... 1 and a half cup
• castor sugar..... ..... 3/4 cup
• Butter .................. 125 gms
• peppermint essence 3/4 tsp
• eggs...................... 2
• milk......................1/2 cup
• cream.....................3 tbsp heaped
Method :• preheat oven to 180 deg.
• sift flour, keep aside.
• beat butter and sugar till creamy.
• add eggs one by one.
• add essence and beat.
• mix cream and milk and keep aside
• fold in the milk and flour alternately into the main batter.
• fill cupcake liners 3/4th full.
• bake for 15 to 18 minutes, cool completely before icing.
BUTTER CREAM FROSTING:
Ingredients:
• unsalted butter..... 100 gms
• icing sugar............ 200 gms
• milk......................1 to 2 tbsp
• vanilla essence 1/2 tsp
• icing sugar............ 200 gms
• milk......................1 to 2 tbsp
• vanilla essence 1/2 tsp
Method:
• Beat softened Butter at room temperature.
• After a minute add icing sugar gradually.
• Beat another two minutes till fluffy.

• Add essence, milk and beat till mixed
• Color as desired, preferably with gel food colors or powder colors mixed with few drops of milk.
• Keep in a cool place while using. and have fun :)
