Butter and jam thumbprints

Butter and jam thumbprints
Ingredients
Flour 1 ¾ cup
Baking powder ½ tsp
Salt ¼ tsp
Soft butter 5 ounces
Sugar 2/3 cup + more for rolling
Egg 1
Vanilla essence 1 tsp
Strawberry jam as required



Method
1. Pre heat oven to 180 degree C, line the baking sheet with butter paper
2. Sieve together flour, baking powder and salt.
3. In a bowl beat butter and sugar for 5 minutes until fluffy, add in egg and vanilla essence, slowly mix in the dry 
ingredients.

4. Scoop the dough into 1 inch balls with a cookie scoop and roll in sugar
5. P lace the dough onto the baking sheet 2 inches apart.
6. Press a thumb print into the centre of the each ball about ½ inch deep, fill each centre with ½ tsp of jam, bake cookies for about 15 minutes or until they are golden in color.
7. Cool cookies on baking sheet and serve.
