Vietnamese Chicken Salad Recipe
Ingredients
- 2 chicken breasts, boiled and shredded
- 1 cucumber cut in ribbons
- 1 onion, finely chopped
- Few mint leaves
- Few coriander leaves
- 1 red chilli, thinly sliced
- Juice of 1 lemon
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1 tbsp peanuts, roasted and chopped
Instructions
In a bowl, mix 2 boiled and shredded chicken breasts, 1 finely chopped onion, 1 thinly sliced red chili, few coriander leaves, few mint leaves and 1 cucumber chopped in ribbons.
Separately, mix juice of 1 lemon, 1 tbsp. fish sauce, 1 tbsp. brown sugar and pour over on salad. Garnish 1 tbsp. roasted and chopped peanuts before serving.
