Roasted Leg of Lamb Recipe
Ingredients Roasted Leg of Lamb
- 1 tbsp kosher salt
- 1 tbsp olive oil
- 1 tbsp rosemary (chopped)
- 1 tbsp thyme leaves (chopped)
- 1 tbsp Dijon mustard
- 2 tbsp ground black pepper
- Cut out the bone-in leg of lamb 5 to 6 pounds
- 4 cloves garlic, minced
Instructions Roasted Leg of Lamb
Line a roast-ing pan with aluminum foil. Before that Pre-heat oven at 340°F.
Pat lamb dry with paper towels. Use a sharp knife, make shallow cuts all over the top side of the lamb.
Mix Pepper, Dijon, olive oil, rosemary, salt, garlic, and thyme In a bowl.
In the prepared roasting pan place the lamb, fluffy side up over the reck. Spread mixture all over the lamb & rub in thoroughly into the cuts that you scored before.
Place it into the oven and roast it until completely reaches temperature of 130°F internal for medium, about 1hr 30mins to 1 hr 45 mins, or until you're satisfied. Let rest 15mins before slicing out.
