Fruity empanadas

Recipe Of Fruity empanadas:

Ingredients for dough
  • Flour 2 cups
  • Caster sugar 2 tbsp heaped
  • Salt ¼ tsp
  • Butter 4 ounce
  • Egg 1
  • Chilled water to knead

Ingredients for filling
  • Mango or strawberry jam as required

Oil for frying
  • Icing sugar to sprinkle

Method for dough
In a bowl mix together flour, sugar, salt, butter until mixture resembles bread crumbs, add eggs and chilled water to form into a dough, chill dough for 30 minutes, roll dough 1/8 inch thick, cut with 3 ½ inch cutter, place 1 tsp heaped jam in centre of round, moisten edges of dough with water, fold in half, seal edges by pressing fork, deep fry empanadas for 2 to 3 minutes until golden brown, drain. Dust with icing sugar and serve.
